People's Republic of Fermentation with Sandor Katz
Sandor Katz calls himself a fermentation Revivalist. Even as the world's leading expert in fermentation he up until a few years ago knew relatively little about the varied fermentation traditions of China. So, he traveled to China in November-December 2016 in order to learn about fermentation practices there. He traveled with his friend Mara King, her mother Judy, and another friend, Mattia Sacco Botto, who documented their travels on video. Apart from Katz, they all speak Mandarin and English, and shared his fermentation and broader food interests. These eight videos, made by Mattia Sacco Botto, document some of what they saw and learned on their journey.
